Also known as hing, asafetida develops a flavour similar to fried onions and garlic when heated in oil. Raw, it has an unpleasant and strong aroma, after all, it is known as devil's dung in some countries, cooking does this spice wonders. A little goes a long way. Adds a wonderful, meaty depth of flavour to vegetarian cooking. Also used as a digestive aid to reduce flatulence.
