Also known as ajwain or carom, ajowan seeds are highly aromatic and their flavour can be described as a mix between anise, oregano, thyme and black pepper. They are closely related to caraway and cumin. Popular in India for use in spice blends, bean and lentil dishes, flatbreads and chickpea fritters.
Toast or fry to reduce their natural bitterness and bring out nutty, roasted flavours. Seeds are small and can be used whole in dishes, or easily ground with a mortar and pestle.
