Caraway has a complex and warm, bittersweet taste with notes of orange peel and a mild hint of anise. Almost a cross between cumin and fennel. Commonly used in central European foods, notably in rye bread and sauerkraut, as well as Northern African blends like tabil and harissa paste.
Toasting brings out the flavour intensity, but take care not to over-toast as seeds will turn bitter. If using ground caraway add late in the cooking process.
