Celery seeds are more intense than the stalks or leaves of the plant. They have a warm, earthy taste with a lingering pleasant bitterness. Canadians and Americans, think of the flavour of Caesar or Bloody Mary drink rimmer. Because of their size, celery seeds are usually added whole but can be easily ground. Wonderful in soups for its natural sodium as well as creamy dressings for potato or egg salad and coleslaw.
The natural bitterness of celery seeds is mellowed by toasting.
