Harness the powerful sweet, bitter and somewhat peppery flavour of cloves by blending it with other warm spices. Its antiseptic properties also make it a great choice for pickling, as seen in European recipes. Native to the Indonesian "spice islands," but now seen across all continents. A star in Chinese five-spice powder, as well as France's signature quatre espices blend.
Use whole or grind before adding to the recipe. Use sparingly as they can be overpowering, 1-3 whole cloves will often do the trick. Add early in the cooking process to give time for flavour to diffuse, flavours are best dispersed in oil or alcohol.
We recommend purchasing cloves whole, and grinding fresh when possible. But we also offer freshly ground cloves for your convenience.
