Strong pine scent with a herbaceous, camphorous flavour and astringent notes. In North America, we tend to associate sage with holiday dinners including savoury stuffings or turkey. In the Mediterranean, it is used more broadly, paired with fish, meat and even pasta dishes. The UK favours its astringent grease-cutting abilities to accompany fatty meats like pork, goose or duck.
