Savory has a peppery bite, and an agreeable flavour reminiscent of thyme, mint or oregano. Its herbaceous scent is highly aromatic, as the name suggests. It is a good flavouring for long-cooked meat or vegetable dishes, particularly beans, it is known as the bean herb in Germany. Use it to replace sage in stuffing recipes. Savory retains its distinctive flavour when dried, and is preferred to fresh in many cooking applications.
