Spanish paprika, known locally as pimenton, comes in various varieties. This variety is sweet, or dulce, with a sweet, smoky aroma and a pleasantly bitter aftertaste. Smoked paprika is produced by smoking the paprika pods over wood as part of the drying and curing process. 

Paprika dissolves well in oil or other liquids to spread colour and flavour through a dish, but the small particle size burns easily, so take care.

Please note paprika is sensitive to light, so it is advisable to store this spice in a dark place to prevent fading.
