Bay leaves release their fragrant, warm flavours gradually and therefore should be added to cooking liquids early in the cooking process. They also add a fresh, eucalyptus note. Fresh leaves are often bitter, whereas dried leaves are not. They are a major component of France's traditional bouquet garni along with thyme and parsley.
The general cooking ratio is one bay leaf for every three tablespoons of oil in a dish. Allow time for the flavour compounds to disperse in cooking liquids.
