Perhaps the most visually appealing spice. The aroma of star anise is fennel and anise, the taste is warming, pungent and sweet with licorice notes. It is the literal star in Chinese cuisine, including Chinese five-spice powder. Also common in South Indian biryani as well as Vietnamese pho broth. Use sparingly, a little goes a long way.
