Aleppo Chile (120 mL jar)
Aleppo chiles, also known as Halaby peppers, have a mild to medium heat with a tart, fruity flavour. Their aroma and flavour is reminiscent of raisins, roasted tobacco, pomegranate and sun-dried tomato. They add texture and a wonderful complexity to dishes and can easily be used in place of common red pepper flakes.
Green Cardamom - Whole (120 mL jar)
Highly aromatic and sweet with a peppery finish, referred to as "the Queen of spices." Native to southern India and Sri Lanka, however, Guatemala is now the world's largest producer. Popular in Indian cuisine, but also Scandinavian bread and pastries, and Middle Eastern coffee and tea preparations. A very versatile spice underused in North America. Sweet and more suitable for desserts than smoky, black cardamom, but also can be used in savoury applications.
Nigella Seeds - Whole (180 mL jar)
Nigella seeds, also known as charnushka in the United States, have an oregano and toasted onion flavour. They are a great crunchy and savoury replacement for sesame seeds or poppy seeds and are commonly used in Middle Eastern bread and Indian pickled condiments. Sometimes mistakenly called 'black cumin seed' or 'black onion seed,' however, it is neither and is of its own plant variety.
Sumac - Ground (180 mL jar)
Sumac has a sharp, acidic and fruity taste which gives flavour to Middle Eastern salads like Fattoush and Za'atar spice blend. Not a particularly aromatic spice, but adds a pleasing souring element, brightening any dish. Can be used as a seasoning, sprinkled on top of dishes like salt to bring out flavours. We dare you to sprinkle it on some hummus.
